These almond flour cookies are soft, chewy, and packed with chocolate. They come together in one bowl and bake in about 10 minutes. Naturally gluten-free without any weird substitutions or gummy textures. Just a genuinely great cookie.
Ingredients
- 2 cups almond flour
- 1 large eggs
- ⅓ cup TN maple syrup
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- ½ tsp baking soda
- ¼ tsp Redmond Real Salt
- ½ cup dark chocolate chips (Enjoy Life)

Directions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a bowl, stir together the almond flour, baking soda, and salt.
- Add the egg, maple syrup, coconut oil, and vanilla. Mix until a dough forms.
- Gently stir in the chocolate chips.
- Scoop tablespoon-sized balls onto the prepared sheet. Flatten slightly with your palm.
- Bake for 10 to 12 minutes until the edges are golden.
- Cool on the pan for 5 minutes. They are delicate when hot but firm up as they cool.
Notes
- Do not overbake. These go from perfect to overdone quickly.
- Try bitter sweet chocolate chips for a deeper chocolate flavor.
- Add ½ cup walnuts or pecan halves for a nutty crunch.
