Apple Cider Vinaigrette

This vinaigrette leans into fall flavors without being heavy. The apple cider vinegar provides a bright, fruity tang, the maple syrup rounds it out with gentle sweetness, and a touch of cinnamon ties it all together. It is especially good on salads with roasted squash, apples, dried cranberries, and toasted nuts.

Ingredients

  • 1/4 cup apple cider vinegar
  • 1/3 cup extra virgin olive oil
  • 2 tbsp TN maple syrup
  • 1/4 tsp Ceylon cinnamon
  • 1/4 tsp Redmond Real Salt
  • 1/4 tsp black pepper

Directions

  1. Combine the apple cider vinegar, maple syrup, cinnamon, salt, and pepper in a mason jar.
  2. Add the olive oil, seal the jar, and shake vigorously for 15 to 20 seconds until well combined.
  3. Taste and adjust the sweetness or seasoning as needed.
  4. Drizzle over salads, roasted vegetables, or grain bowls. Shake well before each use.

Notes

  • This is excellent on a salad with mixed greens, sliced apples, pecan halves (raw), and crumbled goat cheese.
  • Add a pinch of ginger for a little warmth and complexity.
  • Keeps in the fridge for up to two weeks.
