This vinaigrette leans into fall flavors without being heavy. It is especially good on salads with roasted squash, apples, dried cranberries, and toasted nuts.
Ingredients
- 1/4 cup apple cider vinegar
- 1/3 cup extra virgin olive oil
- 2 tbsp TN maple syrup
- 1/4 tsp Ceylon cinnamon
- 1/4 tsp Redmond Real Salt
- 1/4 tsp black pepper

Directions
- Combine the apple cider vinegar, maple syrup, cinnamon, salt, and pepper in a mason jar.
- Add the olive oil, seal the jar, and shake vigorously for 15 to 20 seconds until well combined.
- Taste and adjust the sweetness or seasoning as needed.
- Drizzle over salads, roasted vegetables, or grain bowls. Shake well before each use.
Notes
- This is excellent on a salad with mixed greens, sliced apples, pecan halves (raw), and crumbled goat cheese.
- Add a pinch of ginger for a little warmth and complexity.
- Keeps in the fridge for up to two weeks.
