There is something deeply satisfying about a pot of steel cut oats simmering on the stove on a cool morning. Adding fresh apples and warm spices turns them into something that smells and tastes like homemade apple pie, minus any guilt. A drizzle of honey on top ties it all together.
Ingredients
- 1 cup steel cut oats
- 3 cups water
- 1 cup milk of choice
- 2 medium apples, peeled and diced
- 2 tbsp butter
- 2 tbsp coconut sugar crystals
- 1 tsp apple pie spice
- ¼ tsp Redmond Real Salt
- Toppings: Duck River honey, chopped walnuts, extra pat of butter

Directions
- Melt the butter in a medium saucepan over medium heat. Add the diced apples and coconut sugar. Cook for 4 to 5 minutes, stirring occasionally, until the apples soften and begin to caramelize.
- Add the steel cut oats and stir for 1 minute to toast lightly.
- Pour in the water and milk, then add the apple pie spice and salt. Bring to a boil.
- Reduce heat to low, cover, and simmer for 25 to 30 minutes, stirring every 5 to 7 minutes, until the oats are tender and creamy.
- Serve topped with a generous drizzle of honey, chopped walnuts, and a pat of butter.
Notes
- For a make-ahead option, cook a big batch and refrigerate up to 5 days. Reheat with a splash of milk.
- Swap apple pie spice for pumpkin pie spice and diced butternut squash for a fall twist.
