Banana Bread Baked Oatmeal

If banana bread and oatmeal had a baby, this would be it. Ripe bananas give this baked oatmeal natural sweetness and a soft, custardy texture. Walnuts add crunch and a touch of honey on top brings it all together. Kids and adults both go crazy for this one.

Ingredients

  • 2 cups rolled oats
  • 3 ripe bananas, mashed (about 1 cup)
  • 2 large eggs
  • 1½ cups milk of choice
  • 3 tbsp Duck River honey
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 tsp Ceylon cinnamon
  • 1 tsp baking powder
  • ¼ tsp Redmond Real Salt
  • ⅓ cup chopped walnuts

Directions

  1. Preheat oven to 350°F. Grease an 8x8 inch baking dish.
  2. In a large bowl, mash the bananas. Whisk in the eggs, milk, honey, melted butter, and vanilla.
  3. Add the oats, cinnamon, baking powder, and salt. Stir until combined.
  4. Pour into the prepared dish. Scatter walnuts over the top.
  5. Bake for 35 to 40 minutes until the center is set and the top is golden brown.
  6. Cool for 10 minutes before slicing.

Notes

  • The riper the bananas, the sweeter this will be. Those brown spotty ones on your counter are perfect.
  • Add a handful of dark chocolate chips to the batter for a chocolate banana version.
  • Stores in the fridge for up to 5 days. Reheat individual portions in the microwave.
