If banana bread and oatmeal had a baby, this would be it. Ripe bananas give this baked oatmeal natural sweetness and a soft, custardy texture. Walnuts add crunch and a touch of honey on top brings it all together. Kids and adults both go crazy for this one.
Ingredients
- 2 cups rolled oats
- 3 ripe bananas, mashed (about 1 cup)
- 2 large eggs
- 1½ cups milk of choice
- 3 tbsp Duck River honey
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- 1 tsp Ceylon cinnamon
- 1 tsp baking powder
- ¼ tsp Redmond Real Salt
- ⅓ cup chopped walnuts

Directions
- Preheat oven to 350°F. Grease an 8x8 inch baking dish.
- In a large bowl, mash the bananas. Whisk in the eggs, milk, honey, melted butter, and vanilla.
- Add the oats, cinnamon, baking powder, and salt. Stir until combined.
- Pour into the prepared dish. Scatter walnuts over the top.
- Bake for 35 to 40 minutes until the center is set and the top is golden brown.
- Cool for 10 minutes before slicing.
Notes
- The riper the bananas, the sweeter this will be. Those brown spotty ones on your counter are perfect.
- Add a handful of dark chocolate chips to the batter for a chocolate banana version.
- Stores in the fridge for up to 5 days. Reheat individual portions in the microwave.
