Blackened chicken is all about a screaming hot skillet and a bold spice crust. The seasoning chars slightly, creating a smoky, intensely flavorful exterior while the inside stays juicy. It takes about 15 minutes from start to finish and delivers more flavor per minute than almost anything else you can cook.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp blackened Cajun seasoning
- 2 tbsp extra virgin olive oil
- 1 tbsp butter
- Lemon wedges for serving

Directions
- Pound the chicken breasts to an even ½-inch thickness. Pat dry.
- Coat both sides generously with the Cajun seasoning.
- Heat the olive oil and butter in a cast iron skillet over high heat until very hot and the butter is starting to brown.
- Cook the chicken for 4 to 5 minutes per side without moving until a dark crust forms and the internal temperature reaches 165°F.
- Squeeze fresh lemon over the chicken and serve immediately.
Notes
- Open a window or turn on the vent. Blackening creates smoke, and that is a good thing.
- Slice over a salad, serve with rice, or use in wraps and sandwiches.
- This seasoning works beautifully on fish as well.
