Quinoa is not just for lunch and dinner. Cooked with a little cinnamon and sweetened with honey, it makes a fantastic hot breakfast cereal with more protein than oatmeal. The texture is lighter and fluffier, and it pairs beautifully with fresh berries and a handful of nuts.
Ingredients
- 1 cup tricolor quinoa, rinsed well
- 2 cups water
- ½ tsp Ceylon cinnamon
- Pinch of Redmond Real Salt
- 2 tbsp Duck River honey
- 1 cup fresh mixed berries
- 2 tbsp chopped walnuts
- 1 tbsp whole black chia seeds

Directions
- Combine the quinoa, water, cinnamon, and salt in a saucepan. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed and the quinoa is fluffy.
- Fluff with a fork and divide into bowls.
- Top each bowl with honey, fresh berries, chopped walnuts, and chia seeds.
Notes
- Rinse the quinoa well before cooking to remove its natural coating, which can taste bitter.
- Make a double batch and refrigerate. Reheat with a splash of milk for quick weekday breakfasts.
- Swap the berries for sliced banana and pecan halves for a different take.
