Breakfast Quinoa Bowl with Berries

Quinoa is not just for lunch and dinner. Cooked with a little cinnamon and sweetened with honey, it makes a fantastic hot breakfast cereal with more protein than oatmeal. The texture is lighter and fluffier, and it pairs beautifully with fresh berries and a handful of nuts.

Ingredients

  • 1 cup tricolor quinoa, rinsed well
  • 2 cups water
  • ½ tsp Ceylon cinnamon
  • Pinch of Redmond Real Salt
  • 2 tbsp Duck River honey
  • 1 cup fresh mixed berries
  • 2 tbsp chopped walnuts
  • 1 tbsp whole black chia seeds

Directions

  1. Combine the quinoa, water, cinnamon, and salt in a saucepan. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed and the quinoa is fluffy.
  3. Fluff with a fork and divide into bowls.
  4. Top each bowl with honey, fresh berries, chopped walnuts, and chia seeds.

Notes

  • Rinse the quinoa well before cooking to remove its natural coating, which can taste bitter.
  • Make a double batch and refrigerate. Reheat with a splash of milk for quick weekday breakfasts.
  • Swap the berries for sliced banana and pecan halves for a different take.
