Making breakfast sausage from scratch is surprisingly easy and the flavor difference is massive. Ground pork, sage, a touch of maple syrup, and a few spices come together into patties that cook up golden and savory in about 10 minutes. You control exactly what goes into them, which is always a good thing.
Ingredients
- 1 lb ground pork
- 1 tsp sage
- ½ tsp thyme
- ½ tsp garlic granules
- ¼ tsp nutmeg
- ¼ tsp cayenne
- 1 tbsp TN maple syrup
- ¾ tsp Redmond Real Salt
- ½ tsp black pepper
- 1 tbsp extra virgin olive oil

Directions
- Combine the ground pork, sage, thyme, garlic granules, nutmeg, cayenne, maple syrup, salt, and pepper in a bowl. Mix gently until just combined.
- Shape into 8 patties, about ½ inch thick.
- Heat the olive oil in a skillet over medium heat. Cook the patties for 3 to 4 minutes per side until golden and cooked through.
Notes
- Make a double batch and freeze the uncooked patties between sheets of parchment paper. Cook straight from frozen, adding 1 to 2 minutes per side.
- The maple syrup adds just a hint of sweetness that balances the sage beautifully.
- Crumble this sausage mixture into scrambled eggs or a breakfast hash instead of making patties.
