Cacao Nib and Banana Oatmeal

Cacao nibs are chocolate in its purest form, and they bring an incredible crunch and bittersweet depth to a simple bowl of oatmeal. Mashed banana adds natural sweetness and creaminess, so you barely need any additional sweetener. This is chocolate for breakfast that you can actually feel good about.

Ingredients

  • 1 cup rolled oats
  • 2 cups water or milk of choice
  • 1 ripe banana, mashed
  • 2 tbsp cacao nibs
  • 1 tbsp cacao powder
  • 1 tbsp TN maple syrup
  • Pinch of Redmond Real Salt
  • Toppings: extra cacao nibs, sliced banana, drizzle of Duck River honey

Directions

  1. Bring the water to a boil in a small saucepan. Stir in the oats and salt.
  2. Reduce heat to medium-low and cook for 3 minutes. Stir in the mashed banana and cacao powder.
  3. Continue cooking for 2 to 3 more minutes until the oats are creamy and the cacao is well incorporated.
  4. Remove from heat and stir in the maple syrup and cacao nibs.
  5. Serve topped with extra cacao nibs, sliced banana, and a drizzle of honey.

Notes

  • For an even richer chocolate flavor, use cocoa powder in place of the cacao powder.
  • Stir in a spoonful of almond butter or peanut butter for extra protein and staying power.
