These delicate squares capture the exotic flavors of traditional Turkish delight with the warming spice of cardamom and the floral essence of rose petals. The soft, gel-like texture and aromatic dusting make them an elegant treat perfect for special occasions.
Ingredients
- 1 cup Cane Sugar
- 1 1/4 cups water, divided
- 1/4 cup Corn Starch
- 1 teaspoon Cardamom
- 2 tablespoons dried Red Roses
- 1 tablespoon Duck River Honey
- 1/4 teaspoon Redmond Real Salt
- 1/2 cup Powdered Sugar
- 2 tablespoons additional Corn Starch for dusting

Directions
- Line an 8x8 inch pan with parchment paper and lightly grease.
- Steep red roses in 1/2 cup boiling water for 10 minutes. Strain, pressing petals to extract liquid. Reserve 1/2 cup rose water.
- In a saucepan, combine sugar and 3/4 cup water. Bring to a boil over medium heat.
- In a separate bowl, whisk corn starch with rose water until smooth.
- Add corn starch mixture to boiling sugar syrup, whisking constantly.
- Add cardamom, honey, and salt. Reduce heat to low and cook, stirring constantly, for 15-20 minutes until very thick.
- Pour into prepared pan and smooth surface. Cool completely, then refrigerate for 3 hours until set.
- Combine powdered sugar and additional corn starch for dusting. Cut into squares and roll in sugar mixture.
Notes
- Can substitute Cardamom Pods - use 6-8 pods, crushed and steeped with rose petals.
- Add a few drops of natural rose extract if stronger rose flavor is desired.
- Store dusted squares in airtight container with parchment between layers.
