Chaga mushroom grows on birch trees in cold climates and has been used in Russian and Scandinavian folk traditions for centuries. When brewed, it produces a dark, rich liquid that looks and tastes surprisingly similar to coffee, with earthy, slightly vanilla-like notes. A touch of cinnamon adds warmth, and honey rounds out the flavor. It is a satisfying, caffeine-free alternative to your morning cup.
Ingredients
- 1 tsp chaga mushroom powder
- ½ tsp Ceylon cinnamon
- 1½ cups hot water
- 1 to 2 tsp Duck River honey
- Splash of milk of choice (optional)

Directions
- Bring the water to a boil, then let it cool for 1 minute (just off the boil is ideal).
- Whisk in the chaga powder and cinnamon until completely dissolved.
- Stir in honey and a splash of milk if desired.
- Drink warm, just like you would a cup of coffee or tea.
Notes
- Chaga has a naturally mild, earthy flavor that is not at all mushroom-like. Most people are surprised by how much it tastes like coffee.
- For a richer brew, simmer the chaga powder in water on the stove for 10 to 15 minutes before adding the other ingredients.
- Try adding a teaspoon of cacao powder for a mocha-style variation.
