These no-bake energy bites combine the warming spices of chai with sweet dates and nuts for a satisfying snack. They're perfect for lunchboxes, hiking, or an afternoon pick-me-up.
Ingredients
- 1 cup Unpitted Medjool Dates, pitted
- 1 cup California Almonds (raw)
- 1/2 cup Rolled Oats
- 2 tablespoons Coconut Sugar Crystals
- 1 teaspoon Ceylon Cinnamon
- 1/2 teaspoon Ginger
- 1/4 teaspoon Cardamom (ground)
- 1/4 teaspoon Cloves
- Pinch of Black Pepper
- 1/4 cup Medium Shredded Coconut for rolling

Directions
- Remove pits from dates and soak in warm water for 10 minutes if they're firm. Drain well.
- In a food processor, pulse almonds and oats until coarsely ground.
- Add dates, coconut sugar, cinnamon, ginger, cardamom, cloves, and black pepper. Process until mixture holds together when pressed.
- Roll mixture into 16 small balls using your hands. Roll each ball in shredded coconut if desired.
- Refrigerate for at least 30 minutes before serving. Store in refrigerator for up to 1 week.
Notes
- Substitute Walnuts (raw) or Cashew Pieces (raw) for almonds.
- Add 1 tablespoon Cacao Powder for chocolate chai bites.
- Use Chai Tea blend ground in a spice grinder instead of individual spices.
- Make ahead and freeze for up to 3 months.
