Chai Spiced Energy Bites

These no-bake energy bites combine the warming spices of chai with sweet dates and nuts for a satisfying snack. They're perfect for lunchboxes, hiking, or an afternoon pick-me-up.

Ingredients

  • 1 cup Unpitted Medjool Dates, pitted
  • 1 cup California Almonds (raw)
  • 1/2 cup Rolled Oats
  • 2 tablespoons Coconut Sugar Crystals
  • 1 teaspoon Ceylon Cinnamon
  • 1/2 teaspoon Ginger
  • 1/4 teaspoon Cardamom (ground)
  • 1/4 teaspoon Cloves
  • Pinch of Black Pepper
  • 1/4 cup Medium Shredded Coconut for rolling

Directions

  1. Remove pits from dates and soak in warm water for 10 minutes if they're firm. Drain well.
  2. In a food processor, pulse almonds and oats until coarsely ground.
  3. Add dates, coconut sugar, cinnamon, ginger, cardamom, cloves, and black pepper. Process until mixture holds together when pressed.
  4. Roll mixture into 16 small balls using your hands. Roll each ball in shredded coconut if desired.
  5. Refrigerate for at least 30 minutes before serving. Store in refrigerator for up to 1 week.

Notes

  • Substitute Walnuts (raw) or Cashew Pieces (raw) for almonds.
  • Add 1 tablespoon Cacao Powder for chocolate chai bites.
  • Use Chai Tea blend ground in a spice grinder instead of individual spices.
  • Make ahead and freeze for up to 3 months.
