These oats are inspired by the warm spices in a good cup of chai tea. Cardamom, cinnamon, and ginger fill the kitchen with an incredible aroma while the oats simmer away. Chopped dates melt into the porridge and add natural sweetness without any added sugar.
Ingredients
- 1 cup steel cut oats
- 3 cups water
- 1 cup oat milk or coconut milk
- ½ tsp cardamom (ground)
- ½ tsp Ceylon cinnamon
- ¼ tsp ginger
- ⅛ tsp cloves
- ¼ tsp Redmond Real Salt
- 4 Medjool dates, pitted and chopped
- Toppings: chopped pecan halves, drizzle of TN maple syrup

Directions
- Bring the water and milk to a boil in a medium saucepan.
- Stir in the steel cut oats, cardamom, cinnamon, ginger, cloves, and salt. Reduce heat to low.
- Cover and simmer for 25 to 30 minutes, stirring occasionally, until the oats are tender.
- Stir in the chopped dates during the last 5 minutes of cooking.
- Serve topped with chopped pecans and a drizzle of maple syrup.
Notes
- Brew a strong cup of chai tea and use it in place of the water for an extra punch of flavor.
- This recipe doubles well and reheats beautifully throughout the week.
