These homemade almond butter cups rival any store-bought version with their rich chocolate coating and creamy almond butter filling. Made with simple, wholesome ingredients, they're the perfect treat for when you want something sweet but satisfying.
Ingredients
- 1 cup Semi Sweet Chocolate Chips
- 1/2 cup Roasted Almond Butter Stock
- 2 tablespoons Coconut Sugar Crystals
- 1/4 teaspoon Redmond Real Salt
- 2 tablespoons coconut oil
- 1/2 teaspoon Vanilla Extract

Directions
- Line a 12-cup mini muffin tin with paper liners. Melt half the chocolate chips with 1 tablespoon coconut oil until smooth.
- Spoon about 1 teaspoon melted chocolate into each liner, spreading to coat the bottom. Refrigerate 15 minutes until set.
- Mix almond butter, coconut sugar, salt, and vanilla until smooth. Divide mixture among cups, leaving room at the top.
- Melt remaining chocolate chips with remaining coconut oil. Spoon over almond butter layer to cover completely. Refrigerate 30 minutes until firm.
