Ingredients

  • 1 cup Semi Sweet Chocolate Chips
  • 1/2 cup Roasted Almond Butter Stock
  • 2 tablespoons Coconut Sugar Crystals
  • 1/4 teaspoon Redmond Real Salt
  • 2 tablespoons coconut oil
  • 1/2 teaspoon Vanilla Extract

*Bolded ingredients are products we typically carry at Tare Bulk Foods.

Directions

  1. Line a 12-cup mini muffin tin with paper liners. Melt half the chocolate chips with 1 tablespoon coconut oil until smooth.
  2. Spoon about 1 teaspoon melted chocolate into each liner, spreading to coat the bottom. Refrigerate 15 minutes until set.
  3. Mix almond butter, coconut sugar, salt, and vanilla until smooth. Divide mixture among cups, leaving room at the top.
  4. Melt remaining chocolate chips with remaining coconut oil. Spoon over almond butter layer to cover completely. Refrigerate 30 minutes until firm.

Notes

  • Try Roasted Peanut Butter Stock for classic peanut butter cups.
  • Use Dark Chocolate Chips (Enjoy Life) for a less sweet version.
  • Add chopped California Almonds (raw) to the almond butter layer for extra crunch.
