This pudding is dangerously close to chocolate mousse, and it is totally fine for breakfast. Cacao powder gives it a deep, real chocolate flavor while chia seeds turn it thick and creamy overnight. You can meal prep several jars at once and have a grab-and-go breakfast that actually excites you in the morning.
Ingredients
- ¼ cup whole black chia seeds
- 1 cup milk of choice
- 2 tbsp cacao powder
- 2 tbsp TN maple syrup
- ½ tsp vanilla extract
- Pinch of Redmond Real Salt
- Toppings: cacao nibs, fresh raspberries, medium shredded coconut

Directions
- Whisk the cacao powder into the milk until smooth, making sure there are no clumps.
- Add the chia seeds, maple syrup, vanilla, and salt. Stir well.
- Cover and refrigerate for at least 4 hours or overnight.
- Stir well before serving. The pudding should be thick and creamy.
- Top with cacao nibs, fresh raspberries, and shredded coconut.
Notes
- For an even thicker pudding, use ⅓ cup chia seeds instead of ¼ cup.
- Top with a spoonful of almond butter and dark chocolate chips for an extra indulgent version.
