Chocolate Chia Seed Pudding

This pudding is dangerously close to chocolate mousse, and it is totally fine for breakfast. Cacao powder gives it a deep, real chocolate flavor while chia seeds turn it thick and creamy overnight. You can meal prep several jars at once and have a grab-and-go breakfast that actually excites you in the morning.

Ingredients

  • ¼ cup whole black chia seeds
  • 1 cup milk of choice
  • 2 tbsp cacao powder
  • 2 tbsp TN maple syrup
  • ½ tsp vanilla extract
  • Pinch of Redmond Real Salt
  • Toppings: cacao nibs, fresh raspberries, medium shredded coconut

Directions

  1. Whisk the cacao powder into the milk until smooth, making sure there are no clumps.
  2. Add the chia seeds, maple syrup, vanilla, and salt. Stir well.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. Stir well before serving. The pudding should be thick and creamy.
  5. Top with cacao nibs, fresh raspberries, and shredded coconut.

Notes

  • For an even thicker pudding, use ⅓ cup chia seeds instead of ¼ cup.
  • Top with a spoonful of almond butter and dark chocolate chips for an extra indulgent version.
