These cookies are proof that you do not need a long list of ingredients to make something delicious. Ripe bananas and oats form the base, chocolate chips make them irresistible, and they are ready in under 20 minutes. Kids love them, and so will you.
Ingredients
- 2 ripe bananas, mashed
- 1½ cups rolled oats
- ½ cup semi sweet chocolate chips
- ½ tsp Ceylon cinnamon
- 1 tsp vanilla extract
- Pinch of Redmond Real Salt

Directions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a bowl, mash the bananas well. Stir in the oats, chocolate chips, cinnamon, vanilla, and salt.
- Let the mixture sit for 5 minutes so the oats absorb some moisture.
- Scoop rounded tablespoons onto the prepared sheet and flatten slightly.
- Bake for 12 to 15 minutes until the edges are golden.
- Cool on the pan for 5 minutes before eating.
Notes
- These are soft and chewy, not crunchy. The texture is more like a baked oatmeal bite.
- Add ¼ cup peanut butter to the batter for extra protein and flavor.
- Swap the chocolate chips for dried cranberries (apple juice infused) or walnuts.
