These energy balls taste like a brownie but are made from nothing but whole foods. Dates provide all the sweetness you need, cacao powder brings deep chocolate flavor, and shredded coconut adds texture. They come together in a food processor in about five minutes, and a couple of them will keep you going through the afternoon.
Ingredients
- 1 cup unpitted Medjool dates, pitted (about 10 dates)
- 1/4 cup cacao powder
- 1/2 cup rolled oats
- 1/4 cup medium shredded coconut, plus extra for rolling
- 1 tbsp coconut oil, melted
- Pinch of Redmond Real Salt

Directions
- Pit the dates and add them to a food processor. Pulse several times until they form a sticky paste.
- Add the cacao powder, oats, shredded coconut, coconut oil, and salt. Process until the mixture comes together and holds its shape when pressed.
- Scoop tablespoon-sized portions and roll them into balls with your hands. If the mixture is too sticky, wet your hands slightly.
- Roll each ball in extra shredded coconut if desired.
- Place on a parchment-lined plate and refrigerate for at least 30 minutes to firm up.
Notes
- If the mixture is too dry and crumbly, add 1 to 2 more dates or a splash of water.
- Try rolling them in cacao powder instead of coconut for a double chocolate finish.
- Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.
