These no-bake energy balls combine the rich depth of cacao with the bold flavor of espresso for an afternoon pick-me-up. Dates provide natural sweetness while nuts add satisfying texture and healthy fats.
Ingredients
- 12 unpitted medjool dates, pitted
- 1 cup walnuts
- 3 tablespoons cacao powder
- 2 tablespoons ground coffee or espresso
- 1 tablespoon cacao nibs
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon Redmond Real Salt
- 2-3 tablespoons water, if needed
- Extra cacao powder for rolling

Directions
- Remove pits from dates. If dates are firm, soak in warm water for 10 minutes.
- In a food processor, pulse walnuts until they form coarse crumbs.
- Add pitted dates and process until a paste forms.
- Add cacao powder, ground coffee, cacao nibs, vanilla, and salt. Process until well combined.
- If mixture is too dry to hold together, add water 1 tablespoon at a time.
- Roll mixture into 16-18 small balls using your hands.
- Roll each ball in extra cacao powder to coat.
- Chill in refrigerator for at least 30 minutes before serving.
Notes
- Try cashew pieces or Brazil nuts instead of walnuts for different flavors.
- Use mushroom coffee for an adaptogenic twist.
- Roll in coconut sugar crystals instead of cacao powder for sweetness.
