Chocolate Espresso Energy Balls

These no-bake energy balls combine the rich depth of cacao with the bold flavor of espresso for an afternoon pick-me-up. Dates provide natural sweetness while nuts add satisfying texture and healthy fats.

Ingredients

  • 12 unpitted medjool dates, pitted
  • 1 cup walnuts
  • 3 tablespoons cacao powder
  • 2 tablespoons ground coffee or espresso
  • 1 tablespoon cacao nibs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon Redmond Real Salt
  • 2-3 tablespoons water, if needed
  • Extra cacao powder for rolling

Directions

  1. Remove pits from dates. If dates are firm, soak in warm water for 10 minutes.
  2. In a food processor, pulse walnuts until they form coarse crumbs.
  3. Add pitted dates and process until a paste forms.
  4. Add cacao powder, ground coffee, cacao nibs, vanilla, and salt. Process until well combined.
  5. If mixture is too dry to hold together, add water 1 tablespoon at a time.
  6. Roll mixture into 16-18 small balls using your hands.
  7. Roll each ball in extra cacao powder to coat.
  8. Chill in refrigerator for at least 30 minutes before serving.

Notes

  • Try cashew pieces or Brazil nuts instead of walnuts for different flavors.
  • Use mushroom coffee for an adaptogenic twist.
  • Roll in coconut sugar crystals instead of cacao powder for sweetness.
