Cilantro Lime Rice

This is the rice that makes everything it touches better. Fluffy white rice gets tossed with bright lime juice, fresh cilantro, and a touch of salt. It is the perfect base for burrito bowls, curries, stir fries, or honestly just eaten on its own with a fried egg on top.

Ingredients

  • 1½ cups white Thai jasmine rice
  • 2¼ cups water
  • 1 tbsp extra virgin olive oil
  • Juice of 2 limes
  • ¼ cup fresh cilantro, chopped
  • ½ tsp Redmond Real Salt

Directions

  1. Rinse the rice until the water runs clear.
  2. Combine the rice, water, olive oil, and salt in a saucepan. Bring to a boil.
  3. Reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let sit covered for 5 minutes.
  4. Fluff with a fork. Stir in the lime juice and cilantro.

Notes

  • Add the lime juice and cilantro after cooking, not during. Heat would dull their brightness.
  • Use brown basmati rice for a nuttier, more fiber-rich version. Cook for 40 minutes instead.
  • This rice pairs especially well with black beans, tacos, and grilled chicken.
