Popcorn is already a great snack, but toss it with cinnamon and coconut sugar while it is still warm and it becomes something special. The sugar sticks to the popcorn and creates a light, sweet coating that is impossible to stop eating. It is the kind of snack that kids and adults both reach for.
Ingredients
- 1/3 cup yellow popcorn
- 2 tbsp coconut oil
- 2 tbsp coconut sugar crystals
- 1 tsp Ceylon cinnamon
- Pinch of Redmond Real Salt
*Bolded ingredients are products we typically carry at Tare Bulk Foods.
Directions
- Heat the coconut oil in a large pot over medium-high heat. Add 3 kernels and cover. When they pop, the oil is ready.
- Add the remaining popcorn kernels, cover, and shake the pot gently. Let the kernels pop, shaking occasionally, until the popping slows to 2 to 3 seconds between pops.
- While the popcorn pops, mix the coconut sugar, cinnamon, and salt together in a small bowl.
- Immediately transfer the hot popcorn to a large bowl and sprinkle the cinnamon sugar mixture over it, tossing as you go to coat evenly.
Notes
- Toss while the popcorn is hot so the sugar mixture sticks. If it does not stick well, drizzle a tiny bit of melted coconut oil over the popcorn first.
- For a savory version, skip the sugar and cinnamon and try nutritional yeast flakes with garlic powder instead.
- Store leftovers in a paper bag at room temperature. Best eaten the same day.
