Dal is one of the most comforting foods in the world, and it is incredibly easy to make. Red lentils cook down into a thick, creamy porridge-like consistency while cumin, turmeric, and ginger add warmth and depth. A swirl of coconut milk at the end makes it extra rich. This is real comfort food.
Ingredients
- 1½ cups red lentils, rinsed
- 1 can (14 oz) coconut milk
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tbsp extra virgin olive oil or coconut oil
- 1½ tsp cumin
- 1 tsp turmeric
- ½ tsp ginger
- ½ tsp coriander
- ¼ tsp cayenne
- 4 cups water or vegetable broth
- 1 tsp Redmond Real Salt
- Juice of 1 lemon
- Fresh cilantro for garnish

Directions
- Heat the oil in a large pot over medium heat. Add the onion and cook for 5 minutes until softened.
- Add the garlic, cumin, turmeric, ginger, coriander, and cayenne. Stir for 1 minute until fragrant.
- Add the rinsed lentils, water, and salt. Bring to a boil.
- Reduce heat, cover, and simmer for 20 to 25 minutes, stirring occasionally, until the lentils are completely broken down.
- Stir in the coconut milk and lemon juice. Cook for 2 more minutes.
- Serve over rice, garnished with cilantro.
Notes
- Serve over white basmati rice with warm naan bread on the side.
- Add a handful of spinach or kale in the last 2 minutes for extra greens.
- For a richer flavor, add 1 tsp garam masala seasoning at the end.
