Coconut Curry Lentil Dal

Dal is one of the most comforting foods in the world, and it is incredibly easy to make. Red lentils cook down into a thick, creamy porridge-like consistency while cumin, turmeric, and ginger add warmth and depth. A swirl of coconut milk at the end makes it extra rich. This is real comfort food.

Ingredients

  • 1½ cups red lentils, rinsed
  • 1 can (14 oz) coconut milk
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp extra virgin olive oil or coconut oil
  • 1½ tsp cumin
  • 1 tsp turmeric
  • ½ tsp ginger
  • ½ tsp coriander
  • ¼ tsp cayenne
  • 4 cups water or vegetable broth
  • 1 tsp Redmond Real Salt
  • Juice of 1 lemon
  • Fresh cilantro for garnish

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and cook for 5 minutes until softened.
  2. Add the garlic, cumin, turmeric, ginger, coriander, and cayenne. Stir for 1 minute until fragrant.
  3. Add the rinsed lentils, water, and salt. Bring to a boil.
  4. Reduce heat, cover, and simmer for 20 to 25 minutes, stirring occasionally, until the lentils are completely broken down.
  5. Stir in the coconut milk and lemon juice. Cook for 2 more minutes.
  6. Serve over rice, garnished with cilantro.

Notes

  • Serve over white basmati rice with warm naan bread on the side.
  • Add a handful of spinach or kale in the last 2 minutes for extra greens.
  • For a richer flavor, add 1 tsp garam masala seasoning at the end.
