Coconut flour waffles have a light, almost cake-like texture that is hard to resist. They crisp up beautifully in the waffle iron and have a subtle sweetness from coconut flour itself. A little goes a long way with coconut flour, so the ingredient list is shorter than you might expect.
Ingredients
- ⅓ cup coconut flour
- 4 large eggs
- ¼ cup coconut milk (canned)
- 2 tbsp melted coconut oil
- 2 tbsp Duck River honey
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp Redmond Real Salt

Directions
- Preheat your waffle iron.
- In a bowl, whisk together the eggs, coconut milk, melted coconut oil, honey, and vanilla.
- Add the coconut flour, baking powder, and salt. Whisk until smooth. Let the batter rest for 3 minutes so the coconut flour absorbs the liquid.
- Grease the waffle iron lightly. Pour batter into the center and cook according to your waffle iron instructions, usually 3 to 5 minutes, until golden and crispy.
- Serve immediately with your favorite toppings.
Notes
- Coconut flour absorbs a lot of liquid, so the batter will be thinner than traditional waffle batter. That is normal.
- Top with fresh berries, maple syrup, and a sprinkle of medium shredded coconut for the full experience.
