Curry powder is one of those spice blends that does a lot of the heavy lifting for you. Rubbed onto chicken thighs and roasted until the skin crackles, it creates an incredible aroma and a flavor that is warm, complex, and completely addictive. This is a set-it-and-forget-it dinner that delivers every time.
Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 tbsp extra virgin olive oil
- 2 tsp curry powder
- 1 tsp garlic granules
- ½ tsp turmeric
- ½ tsp ginger
- 1 tsp Redmond Real Salt
- ½ tsp black pepper

Directions
- Preheat oven to 425°F. Pat the chicken thighs dry.
- Mix the curry powder, garlic granules, turmeric, ginger, salt, and pepper.
- Rub the chicken with olive oil, then coat with the curry spice mixture.
- Arrange skin-side up on a lined baking sheet.
- Roast for 35 to 40 minutes until the skin is crispy and the internal temperature reaches 165°F.
- Rest for 5 minutes before serving.
Notes
- Serve over white basmati rice or brown basmati rice with steamed vegetables.
- A squeeze of lime and a dollop of yogurt on the side complement the curry spices beautifully.
- Try adding garam masala seasoning to the rub for even more depth.
