Dark Chocolate Avocado Mousse

Yes, avocado mousse is real and it is spectacular. Ripe avocados blend into a silky, rich base that tastes purely of chocolate. Nobody will guess the secret ingredient. It is dairy-free, refined sugar-free, and comes together in about five minutes.

Ingredients

  • 2 ripe avocados
  • ¼ cup cocoa powder
  • ¼ cup TN maple syrup
  • ¼ cup coconut milk (full-fat, canned)
  • 1 tsp vanilla extract
  • Pinch of Redmond Real Salt
  • Toppings: cacao nibs, fresh berries, or coconut whipped cream

Directions

  1. Scoop the avocado flesh into a food processor or blender.
  2. Add the cocoa powder, maple syrup, coconut milk, vanilla, and salt.
  3. Blend on high for 1 to 2 minutes, scraping down the sides as needed, until completely smooth with no lumps.
  4. Taste and adjust sweetness. Add more maple syrup if desired.
  5. Divide among small bowls or ramekins. Refrigerate for at least 30 minutes to firm up.
  6. Top with cacao nibs, berries, or a dollop of coconut whipped cream.

Notes

  • The avocados must be perfectly ripe. Underripe avocados will not blend smooth.
  • For a richer flavor, use cacao powder instead of cocoa. It has a deeper, more complex taste.
  • This keeps in the fridge for up to 2 days, though it is best eaten fresh.
