These nutrient-dense bites combine the omega-3 power of chia seeds with antioxidant-rich cacao and naturally sweet dates. They're the perfect grab-and-go snack for busy days.
Ingredients
- 1 cup unpitted medjool dates, pitted
- 1/2 cup California almonds
- 2 tbsp whole black chia seeds
- 3 tbsp cacao powder
- 2 tbsp coconut flour
- 1 tbsp TN maple syrup
- 1/4 tsp Redmond Real Salt
- 1/4 cup cacao nibs
- 2 tbsp medium shredded coconut for rolling

Directions
- Remove pits from medjool dates and soak in warm water 5 minutes if they're firm.
- In a food processor, pulse almonds until finely chopped. Add drained dates and process until paste forms.
- Add chia seeds, cacao powder, coconut flour, maple syrup, and salt. Process until well combined.
- Stir in cacao nibs by hand for texture.
- Roll mixture into 12-14 balls using your hands. Roll each ball in shredded coconut.
- Chill 30 minutes to firm up before serving. Store in refrigerator.
Notes
- Substitute cocoa powder if you prefer milder chocolate flavor
- Try rolling in coconut sugar crystals for sweetness
