Elderberry Immune Support Smoothie

This deep purple smoothie packs immune-supporting elderberries with warming ginger and cinnamon for a delicious wellness boost. The natural sweetness from dates balances the tartness of elderberries perfectly.

Ingredients

  • 2 tablespoons elderberries
  • 1 cup hot water
  • 1 frozen banana
  • 1/2 cup frozen blueberries
  • 3 unpitted medjool dates, pitted
  • 1/2 teaspoon fresh ginger, grated
  • 1/4 teaspoon cinnamon
  • 1 cup coconut milk or plant milk
  • 1 tablespoon whole black chia seeds
  • Ice cubes as needed

Directions

  1. Steep elderberries in hot water for 10 minutes to create a concentrated tea. Strain out berries and let liquid cool slightly.
  2. Remove pits from dates and soak in warm water for 5 minutes if very firm.
  3. In a high-speed blender, combine elderberry tea, banana, blueberries, pitted dates, ginger, and cinnamon.
  4. Add coconut milk and blend until smooth and creamy.
  5. Add chia seeds and pulse briefly to incorporate without grinding.
  6. Add ice as needed for desired consistency and blend again.
  7. Serve immediately while cold.

Notes

  • Substitute goji berries soaked in hot water for a different antioxidant boost.
  • Add 1/2 teaspoon ashwagandha powder for additional adaptogenic support.
  • Try TN maple syrup instead of dates for a different sweetener option.
