Greek Salad

A proper Greek salad is one of the simplest and most satisfying salads in the world. Crisp cucumber, ripe tomatoes, sharp red onion, briny olives, and creamy feta, all tossed in a simple red wine vinegar and olive oil dressing. No lettuce needed. It is fresh, colorful, and absolutely timeless.

Ingredients

  • 2 large cucumbers, chopped
  • 4 medium tomatoes, chopped
  • ½ red onion, sliced thin
  • ½ cup Kalamata olives
  • 4 oz feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp oregano
  • ½ tsp Redmond Real Salt
  • ¼ tsp black pepper

Directions

  1. Combine the cucumbers, tomatoes, red onion, and olives in a large bowl.
  2. Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the vegetables and toss gently.
  4. Top with crumbled feta cheese.

Notes

  • Let the salad sit for 10 minutes before serving so the dressing can soak into the vegetables.
  • Use the best quality feta you can find. It makes a big difference.
  • Add a sprinkle of oregano on top for an extra pop of flavor.
