Ingredients
- 2 large cucumbers, chopped
- 4 medium tomatoes, chopped
- ½ red onion, sliced thin
- ½ cup Kalamata olives
- 4 oz feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp oregano
- ½ tsp Redmond Real Salt
- ¼ tsp black pepper

Directions
- Combine the cucumbers, tomatoes, red onion, and olives in a large bowl.
- Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the vegetables and toss gently.
- Top with crumbled feta cheese.
Notes
- Let the salad sit for 10 minutes before serving so the dressing can soak into the vegetables.
- Use the best quality feta you can find. It makes a big difference.
- Add a sprinkle of oregano on top for an extra pop of flavor.
