These skewers are marinated in a simple Greek-inspired blend of lemon, garlic, and oregano. The acid in the lemon juice tenderizes the meat while the herbs add bright, fresh flavor. They grill up quickly and are perfect for summer cookouts or a fast weeknight dinner cooked in the oven.
Ingredients
- 1.5 lbs chicken breasts, cut into 1-inch cubes
- 3 tbsp extra virgin olive oil
- Juice of 2 lemons
- 3 cloves garlic, minced
- 1 tsp oregano
- ½ tsp garlic granules
- ½ tsp onion powder
- 1 tsp Redmond Real Salt
- ½ tsp black pepper
- Wooden or metal skewers

Directions
- Combine the olive oil, lemon juice, garlic, oregano, garlic granules, onion powder, salt, and pepper in a bowl.
- Add the chicken cubes and toss to coat. Marinate for at least 30 minutes or up to 4 hours in the fridge.
- Thread the chicken onto skewers. If using wooden skewers, soak them in water for 20 minutes first.
- Grill over medium-high heat for 4 to 5 minutes per side until charred and the internal temperature reaches 165°F. Alternatively, roast in the oven at 425°F for 5 to 6 minutes per side.
Notes
- Serve with tzatziki, pita bread, and a simple cucumber tomato salad for a full Greek-style meal.
- Thread vegetables (bell pepper, onion, zucchini) between the chicken pieces for a more colorful skewer.
