Herb Butter Roasted Turkey Breast

You do not need to wait for a holiday to roast a turkey breast. It is actually one of the easiest and most impressive things you can cook for a dinner party or even a Sunday meal. Herb butter under the skin keeps the meat incredibly moist while crisping the skin to golden perfection.

Ingredients

  • 1 bone-in turkey breast (5 to 7 lbs)
  • 4 tbsp butter, softened
  • 1 tbsp extra virgin olive oil
  • 1 tsp sage
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tsp garlic granules
  • 1 tsp Redmond Real Salt
  • ½ tsp black pepper
  • 1 cup chicken broth

Directions

  1. Preheat oven to 350°F. Pat the turkey breast dry.
  2. Mix the softened butter with sage, rosemary, thyme, garlic granules, salt, and pepper.
  3. Gently loosen the skin over the breast and spread most of the herb butter underneath. Rub any remaining butter on the outside. Drizzle with olive oil.
  4. Place the turkey breast-side up in a roasting pan. Pour the broth into the bottom of the pan.
  5. Roast for about 1.5 to 2 hours (roughly 20 minutes per pound) until the internal temperature reaches 165°F.
  6. Let rest for 15 to 20 minutes before carving.

Notes

  • Baste with the pan drippings every 30 minutes for extra flavor and moisture.
  • Use the pan drippings to make a simple gravy.
  • Leftovers make incredible sandwiches, salads, and soups for days.
