You do not need to wait for a holiday to roast a turkey breast. It is actually one of the easiest and most impressive things you can cook for a dinner party or even a Sunday meal. Herb butter under the skin keeps the meat incredibly moist while crisping the skin to golden perfection.
Ingredients
- 1 bone-in turkey breast (5 to 7 lbs)
- 4 tbsp butter, softened
- 1 tbsp extra virgin olive oil
- 1 tsp sage
- 1 tsp rosemary
- 1 tsp thyme
- 1 tsp garlic granules
- 1 tsp Redmond Real Salt
- ½ tsp black pepper
- 1 cup chicken broth

Directions
- Preheat oven to 350°F. Pat the turkey breast dry.
- Mix the softened butter with sage, rosemary, thyme, garlic granules, salt, and pepper.
- Gently loosen the skin over the breast and spread most of the herb butter underneath. Rub any remaining butter on the outside. Drizzle with olive oil.
- Place the turkey breast-side up in a roasting pan. Pour the broth into the bottom of the pan.
- Roast for about 1.5 to 2 hours (roughly 20 minutes per pound) until the internal temperature reaches 165°F.
- Let rest for 15 to 20 minutes before carving.
Notes
- Baste with the pan drippings every 30 minutes for extra flavor and moisture.
- Use the pan drippings to make a simple gravy.
- Leftovers make incredible sandwiches, salads, and soups for days.
