Herb Crusted Lamb Chops with Rosemary Salt

These herb-crusted lamb chops deliver elegant dining at home with minimal effort. The fragrant herb coating and rosemary-infused salt create layers of flavor that complement the rich, tender lamb perfectly.

Ingredients

  • 8 lamb chops, about 1-inch thick
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Rosemary
  • 2 tablespoons Thyme
  • 1 tablespoon Garlic Powder
  • 2 teaspoons Redmond Real Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon additional Rosemary for salt
  • 1 teaspoon additional Redmond Real Salt for finishing

Directions

  1. Bring lamb chops to room temperature, about 15 minutes. Preheat oven to 400°F.
  2. Combine 2 tablespoons rosemary, thyme, garlic powder, salt, and black pepper in small bowl.
  3. Rub lamb chops with olive oil, then coat evenly with herb mixture.
  4. Heat oven-safe skillet over medium-high heat. Sear lamb chops 2-3 minutes per side until golden.
  5. Transfer skillet to oven and roast 8-12 minutes for medium-rare (internal temp 135°F).
  6. Meanwhile, combine remaining rosemary and salt for finishing salt.
  7. Let lamb rest 5 minutes, then sprinkle with rosemary salt before serving.

Notes

  • Internal temperature should reach 135°F for medium-rare, 145°F for medium
  • Substitute oregano or sage for different herb profiles
  • The rosemary finishing salt works beautifully on roasted vegetables too
