Ingredients
- 8 lamb chops, about 1-inch thick
- 3 tablespoons Extra Virgin Olive Oil
- 2 tablespoons Rosemary
- 2 tablespoons Thyme
- 1 tablespoon Garlic Powder
- 2 teaspoons Redmond Real Salt
- 1 teaspoon Black Pepper
- 1 teaspoon additional Rosemary for salt
- 1 teaspoon additional Redmond Real Salt for finishing

Directions
- Bring lamb chops to room temperature, about 15 minutes. Preheat oven to 400°F.
- Combine 2 tablespoons rosemary, thyme, garlic powder, salt, and black pepper in small bowl.
- Rub lamb chops with olive oil, then coat evenly with herb mixture.
- Heat oven-safe skillet over medium-high heat. Sear lamb chops 2-3 minutes per side until golden.
- Transfer skillet to oven and roast 8-12 minutes for medium-rare (internal temp 135°F).
- Meanwhile, combine remaining rosemary and salt for finishing salt.
- Let lamb rest 5 minutes, then sprinkle with rosemary salt before serving.
Notes
- Internal temperature should reach 135°F for medium-rare, 145°F for medium
- Substitute oregano or sage for different herb profiles
