Bitter flavors have largely disappeared in modern cooking, but digestive systems still respond to them. This simple bitters preparation uses time-honored herbs to create a concentrated extract that you sip in small amounts before meals. The flavor is complex, earthy and slightly sweet thanks to fennel, with warming notes of ginger.
Ingredients
- 2 tbsp dandelion root
- 2 tbsp burdock root
- 1 tbsp ginger root
- 1 tsp fennel seed
- 2 cups apple cider vinegar or high-proof vodka

Directions
- Place the dandelion root, burdock root, ginger root, and fennel seed in a clean pint-size mason jar.
- Pour the apple cider vinegar or vodka over the herbs until they are completely covered with at least 1 inch of liquid above them.
- Cap tightly (use a plastic lid or place parchment paper under a metal lid if using vinegar, as it corrodes metal).
- Store in a cool, dark place for 4 to 6 weeks, shaking the jar every few days.
- Strain through cheesecloth into a clean jar, squeezing the herbs well. Store in the fridge.
Notes
- Take 1 teaspoon in a small amount of water 15 to 30 minutes before meals.
- The vinegar version is alcohol-free and still very effective. Use apple cider vinegar for the best results.
- These bitters will keep in the fridge for 6 months or longer.
