This naturally gluten-free flatbread uses ground chickpeas as the base, creating a protein-rich bread that's perfect for dipping or as a side. The addition of herbs makes it fragrant and flavorful.
Ingredients
- 1 cup Garbanzo Beans (Chick Peas), ground into flour
- 1 cup warm water
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Redmond Real Salt
- 1 tsp Italian seasoning
- 1/2 tsp Garlic Powder
- 1/4 tsp Black Pepper
- 2 tbsp fresh herbs (or 1 tbsp Rosemary)

Directions
- Grind garbanzo beans in a high-speed blender or spice grinder until you have a fine flour. You may need to do this in batches.
- Whisk chickpea flour with water, olive oil, salt, Italian seasoning, garlic powder, and black pepper. Let batter rest for 10 minutes to thicken.
- Heat a large skillet over medium heat. Pour batter into pan, spreading into a thin circle about 8 inches across.
- Cook for 4-5 minutes until edges are set and bottom is golden. Flip carefully and cook another 3-4 minutes.
- Sprinkle with fresh herbs and serve warm.
Notes
- If you don't have a grain mill, many health stores will grind Garbanzo Beans for you, or you can buy pre-made chickpea flour.
- Try Herbs De Provence or Greek Seasoning instead of Italian seasoning for variety.
- Serve with hummus, olive oil, or as a base for toppings like roasted vegetables.
