Herbed Chickpea Flatbread

This naturally gluten-free flatbread uses ground chickpeas as the base, creating a protein-rich bread that's perfect for dipping or as a side. The addition of herbs makes it fragrant and flavorful.

Ingredients

  • 1 cup Garbanzo Beans (Chick Peas), ground into flour
  • 1 cup warm water
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Redmond Real Salt
  • 1 tsp Italian seasoning
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • 2 tbsp fresh herbs (or 1 tbsp Rosemary)

Directions

  1. Grind garbanzo beans in a high-speed blender or spice grinder until you have a fine flour. You may need to do this in batches.
  2. Whisk chickpea flour with water, olive oil, salt, Italian seasoning, garlic powder, and black pepper. Let batter rest for 10 minutes to thicken.
  3. Heat a large skillet over medium heat. Pour batter into pan, spreading into a thin circle about 8 inches across.
  4. Cook for 4-5 minutes until edges are set and bottom is golden. Flip carefully and cook another 3-4 minutes.
  5. Sprinkle with fresh herbs and serve warm.

Notes

  • If you don't have a grain mill, many health stores will grind Garbanzo Beans for you, or you can buy pre-made chickpea flour.
  • Try Herbs De Provence or Greek Seasoning instead of Italian seasoning for variety.
  • Serve with hummus, olive oil, or as a base for toppings like roasted vegetables.
