Hibiscus Cooler

Hibiscus tea has a gorgeous deep red color and a bright, tart flavor that is somewhere between cranberry and pomegranate. This cooler steeps the flowers into a strong concentrate, sweetens it with honey, and serves it over plenty of ice. It is one of the most refreshing drinks you can make at home.

Ingredients

  • 1/4 cup hibiscus
  • 4 cups boiling water
  • 3 tbsp Duck River honey
  • 2 tbsp fresh lime juice
  • Ice

Directions

  1. Place the hibiscus flowers in a heatproof pitcher or large jar. Pour the boiling water over them.
  2. Let steep for 15 to 20 minutes. The longer it steeps, the stronger and more tart it will be.
  3. Strain out the flowers, then stir in the honey while the tea is still warm.
  4. Add the lime juice, let cool to room temperature, then refrigerate until cold. Serve over plenty of ice.

Notes

  • This keeps in the fridge for up to 5 days and actually gets better overnight.
  • Add fresh mint leaves or sliced cucumber for a spa-water twist.
  • Swap the Duck River honey for coconut sugar crystals for a vegan version.
