Making your own vanilla extract is one of the simplest kitchen projects you can take on. Split the beans, drop them in a bottle with vodka, and wait. After a few months, you will have extract with a depth of flavor that puts the imitation stuff to shame. It also makes an incredible homemade gift.
Ingredients
- 5 vanilla beans
- 1 cup vodka (80 proof or higher)
- 1 cinnamon sticks (Korintje) (optional, for warmth)

Directions
- Using a sharp knife, split each vanilla bean lengthwise down the center, leaving about half an inch connected at one end.
- Place the split beans into a clean glass jar or bottle. An 8-ounce jar works perfectly.
- Pour the vodka over the beans, making sure they are fully submerged. Seal the jar tightly.
- Store in a cool, dark place like a pantry or cabinet. Shake the jar gently once a week.
- The extract will be usable after about 8 weeks, but it gets better with time. For the richest flavor, wait at least 4 to 6 months.
Notes
- As you use extract, top off the jar with more vodka. The beans will continue to infuse for a year or longer.
- Replace the vanilla beans with fresh ones once the flavor starts to fade, typically after 12 to 18 months.
- Bourbon or rum can be used in place of vodka for a warmer, more complex flavor.
