This is a deeply satisfying bowl of oatmeal that feels a little special without any extra effort. Dried figs soften into the hot oats and become almost jam-like, while toasted walnuts bring a rich crunch. Finished with a drizzle of local honey, it is the kind of breakfast that slows you down in the best way.
Ingredients
- 1 cup rolled oats
- 2 cups water or milk of choice
- 6 black mission figs, stems removed, chopped
- ¼ cup chopped walnuts
- 2 tbsp Duck River honey
- ½ tsp Ceylon cinnamon
- Pinch of Redmond Real Salt
*Bolded ingredients are products we typically carry at Tare Bulk Foods.
Directions
- Bring the water to a boil in a small saucepan. Stir in the oats, chopped figs, cinnamon, and salt.
- Reduce heat to medium-low and cook for 5 to 7 minutes, stirring occasionally, until the oats are creamy and the figs have softened.
- While the oats cook, toast the walnuts in a dry skillet over medium heat for 3 to 4 minutes until fragrant. Watch them closely.
- Spoon the oatmeal into bowls. Top with toasted walnuts and a generous drizzle of honey.
Notes
- Substitute dried apricots or Medjool dates for the figs for a different sweetness profile.
- Add a tablespoon of flax seeds while cooking for extra fiber and omega-3s.
