Hot Honey

Hot honey has taken over restaurant menus for good reason. The combination of floral sweetness and slow-building heat is completely addictive. Making your own at home is as simple as warming honey with cayenne, and using good local honey makes the flavor so much more complex than the pre-made versions.

Ingredients

  • 1 cup Duck River honey
  • 1 to 2 tsp cayenne (adjust to your heat tolerance)
  • 1 tbsp apple cider vinegar
  • Pinch of Redmond Real Salt

Directions

  1. Pour the honey into a small saucepan over low heat. Warm gently for 2 to 3 minutes. Do not let it boil.
  2. Stir in the cayenne, apple cider vinegar, and salt. Continue warming and stirring for another 3 to 4 minutes to let the heat infuse into the honey.
  3. Remove from heat and let it cool to room temperature. The flavor will continue to develop as it sits.
  4. Transfer to a jar or squeeze bottle. Store at room temperature.

Notes

  • Start with 1 teaspoon of cayenne and work up. The heat intensifies as it sits.
  • This is incredible drizzled over pizza, biscuits, fried chicken, roasted sweet potatoes, or even vanilla ice cream.
  • Keeps at room temperature for several months, just like regular honey.
