Jasmine green tea has a naturally floral, almost perfumed quality that is beautiful on its own and even better served cold. The trick is to brew it at a slightly lower temperature so you get the fragrance without any bitterness. Lightly sweetened and poured over ice, it is one of the most elegant and simple drinks you can make.
Ingredients
- 2 tbsp jasmine green tea
- 2 cups hot water (175 degrees, not boiling)
- 1 tbsp Duck River honey
- Fresh lemon slices (optional)
- Ice

Directions
- Heat the water to about 175 degrees. If you do not have a thermometer, bring water to a boil and let it sit for 2 to 3 minutes to cool slightly.
- Steep the jasmine green tea in the hot water for 3 minutes. Do not over-steep or it will become bitter.
- Strain out the tea leaves and stir in the honey while the tea is still warm.
- Let cool to room temperature, then pour over a tall glass of ice. Add lemon slices if desired.
Notes
- For a cold-brew version, steep the tea leaves in 2 cups of cold water in the fridge for 6 to 8 hours. This produces an incredibly smooth result.
- Try strawberry green tea or raspberry green tea for a fruitier iced tea.
- Garnish with fresh mint leaves for extra freshness.
