Italian Sausage and Peppers

Sausage and peppers is one of those classic, no-fuss dinners that never gets old. Sweet Italian sausage caramelizes beautifully in a hot skillet while peppers and onions soften into sweet, tender strips. It is perfect on its own, stuffed into a hoagie roll, or served over pasta.

Ingredients

  • 1.5 lbs loose Italian sausage
  • 3 bell peppers (mixed colors), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp Italian seasoning
  • ½ tsp chili peppers
  • ½ tsp Redmond Real Salt
  • ¼ tsp black pepper

Directions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausage and cook for 6 to 8 minutes, breaking into pieces, until browned. Remove and set aside.
  2. Add the remaining oil to the pan. Add the peppers and onion. Cook for 6 to 8 minutes until softened and slightly charred.
  3. Add the garlic, Italian seasoning, and chili flakes. Stir for 30 seconds.
  4. Return the sausage to the pan and toss everything together. Season with salt and pepper.

Notes

  • Serve on crusty bread for a classic sausage and pepper sandwich.
  • Toss with cooked fusilli or brown rice spaghetti and a spoonful of marinara for an easy pasta dinner.
  • This is great for meal prep and reheats well for lunch the next day.
