Sausage and peppers is one of those classic, no-fuss dinners that never gets old. Sweet Italian sausage caramelizes beautifully in a hot skillet while peppers and onions soften into sweet, tender strips. It is perfect on its own, stuffed into a hoagie roll, or served over pasta.
Ingredients
- 1.5 lbs loose Italian sausage
- 3 bell peppers (mixed colors), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1 tsp Italian seasoning
- ½ tsp chili peppers
- ½ tsp Redmond Real Salt
- ¼ tsp black pepper

Directions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausage and cook for 6 to 8 minutes, breaking into pieces, until browned. Remove and set aside.
- Add the remaining oil to the pan. Add the peppers and onion. Cook for 6 to 8 minutes until softened and slightly charred.
- Add the garlic, Italian seasoning, and chili flakes. Stir for 30 seconds.
- Return the sausage to the pan and toss everything together. Season with salt and pepper.
Notes
- Serve on crusty bread for a classic sausage and pepper sandwich.
- Toss with cooked fusilli or brown rice spaghetti and a spoonful of marinara for an easy pasta dinner.
- This is great for meal prep and reheats well for lunch the next day.
