Lavender Lemonade

Lavender and lemon are a natural pairing, floral and bright at the same time. This lemonade starts with a simple lavender-infused syrup that gives every glass a subtle, almost perfumed quality. It is incredibly refreshing on a hot day and looks gorgeous in a glass pitcher.

Ingredients

  • 2 tbsp lavender flowers
  • 1/2 cup Duck River honey
  • 1 cup hot water
  • 1 cup fresh lemon juice (about 6 lemons)
  • 3 cups cold water
  • Ice

Directions

  1. Combine the hot water, lavender flowers, and honey in a jar or bowl. Stir until the honey dissolves, then let steep for 15 to 20 minutes.
  2. Strain out the lavender flowers through a fine mesh strainer.
  3. In a pitcher, combine the lavender honey syrup, fresh lemon juice, and cold water. Stir well.
  4. Taste and adjust sweetness or tartness to your liking. Serve over ice.

Notes

  • A little lavender goes a long way. Start with 2 tablespoons and add more next time if you want a stronger floral flavor.
  • Garnish with a sprig of fresh lavender or a lemon wheel for a nice presentation.
  • Swap the Duck River honey for coconut sugar crystals dissolved in the hot water for a vegan version.
