Lemon Garlic Roasted Broccoli

Roasting transforms broccoli from a boring side into something you will actively crave. High heat crisps the edges and caramelizes the florets while garlic adds a savory punch. A squeeze of lemon at the end brightens everything up. This is the side dish people always ask for the recipe.

Ingredients

  • 2 large heads broccoli, cut into florets
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, sliced
  • ½ tsp garlic granules
  • ½ tsp Redmond Real Salt
  • ¼ tsp black pepper
  • ¼ tsp chili peppers
  • Juice of 1 lemon

Directions

  1. Preheat oven to 425°F. Toss the broccoli florets with olive oil, garlic slices, garlic granules, salt, pepper, and chili flakes.
  2. Spread in a single layer on a lined baking sheet. Do not overcrowd.
  3. Roast for 20 to 25 minutes until the edges are crispy and browned.
  4. Squeeze the lemon juice over the top and serve immediately.

Notes

  • The key is high heat and not overcrowding. The broccoli should roast, not steam.
  • Toss with a little grated Parmesan after roasting for extra flavor.
  • This works great with cauliflower or Brussels sprouts too.
