Roasting transforms broccoli from a boring side into something you will actively crave. High heat crisps the edges and caramelizes the florets while garlic adds a savory punch. A squeeze of lemon at the end brightens everything up. This is the side dish people always ask for the recipe.
Ingredients
- 2 large heads broccoli, cut into florets
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, sliced
- ½ tsp garlic granules
- ½ tsp Redmond Real Salt
- ¼ tsp black pepper
- ¼ tsp chili peppers
- Juice of 1 lemon
*Bolded ingredients are products we typically carry at Tare Bulk Foods.
Directions
- Preheat oven to 425°F. Toss the broccoli florets with olive oil, garlic slices, garlic granules, salt, pepper, and chili flakes.
- Spread in a single layer on a lined baking sheet. Do not overcrowd.
- Roast for 20 to 25 minutes until the edges are crispy and browned.
- Squeeze the lemon juice over the top and serve immediately.
Notes
- The key is high heat and not overcrowding. The broccoli should roast, not steam.
- Toss with a little grated Parmesan after roasting for extra flavor.
- This works great with cauliflower or Brussels sprouts too.
