Lemon Herb Dressing

Sometimes the best dressings are the simplest ones. Fresh lemon juice, good olive oil, and a few dried herbs create a bright, clean flavor that works on Greek salads, grain bowls, grilled chicken, roasted vegetables, and more. This one comes together in under five minutes and is endlessly versatile.

Ingredients

  • 1/3 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp Redmond Real Salt
  • 1/4 tsp black pepper
  • 1/2 tsp dill

Directions

  1. Combine the lemon juice, oregano, garlic powder, dill, salt, and pepper in a small bowl. Let the dried herbs sit in the lemon juice for 2 to 3 minutes to soften.
  2. Whisk in the olive oil in a slow, steady stream until the dressing is emulsified.
  3. Taste and adjust the salt, lemon, or herbs to your preference.
  4. Use immediately or transfer to a jar and refrigerate. Shake or whisk before each use.

Notes

  • Add a pinch of cumin for a Middle Eastern twist, or swap the oregano for basil for an Italian direction.
  • This doubles as a marinade for chicken, shrimp, or vegetables. Let them sit in it for 30 minutes before cooking.
  • Keeps in the fridge for up to 10 days.
