Sometimes the best dressings are the simplest ones. Fresh lemon juice, good olive oil, and a few dried herbs create a bright, clean flavor that works on Greek salads, grain bowls, grilled chicken, roasted vegetables, and more. This one comes together in under five minutes and is endlessly versatile.
Ingredients
- 1/3 cup extra virgin olive oil
- 3 tbsp fresh lemon juice
- 1 tsp oregano
- 1 tsp garlic powder
- 1/2 tsp Redmond Real Salt

- 1/2 tsp dill
*Bolded ingredients are products we typically carry at Tare Bulk Foods.
Directions
- Combine the lemon juice, oregano, garlic powder, dill, salt, and pepper in a small bowl. Let the dried herbs sit in the lemon juice for 2 to 3 minutes to soften.
- Whisk in the olive oil in a slow, steady stream until the dressing is emulsified.
- Taste and adjust the salt, lemon, or herbs to your preference.
- Use immediately or transfer to a jar and refrigerate. Shake or whisk before each use.
Notes
- Add a pinch of cumin for a Middle Eastern twist, or swap the oregano for basil for an Italian direction.
- This doubles as a marinade for chicken, shrimp, or vegetables. Let them sit in it for 30 minutes before cooking.
- Keeps in the fridge for up to 10 days.
