Maple Dijon Vinaigrette

If you want a dressing that works on practically any salad, this is the one. The maple syrup adds just enough sweetness to balance the tang of the vinegar, and the mustard gives it body and a little bite. It comes together in under five minutes and keeps beautifully in the fridge all week.

Ingredients

  • 2 tbsp TN maple syrup
  • 3 tbsp apple cider vinegar
  • 1/3 cup extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1/4 tsp Redmond Real Salt
  • 1/4 tsp black pepper

Directions

  1. Add the maple syrup, apple cider vinegar, Dijon mustard, salt, and pepper to a mason jar.
  2. Pour in the olive oil, seal the jar tightly, and shake vigorously for 20 seconds until smooth and emulsified.
  3. Taste and adjust the sweetness, salt, or tang to your preference.
  4. Drizzle over mixed greens, grain bowls, or roasted root vegetables.

Notes

  • This dressing is especially good on salads with apples, pecans, and goat cheese.
  • Swap the apple cider vinegar for red wine vinegar for a deeper, more robust flavor.
  • Keeps in the fridge for up to two weeks. Shake well before each use.
