Matcha Coconut Chia Pudding

If you love the earthy, slightly grassy flavor of matcha, you will love it in chia pudding form. The coconut milk makes it extra rich and creamy, and the color is gorgeous enough to photograph before you eat it. This is a calm, grounding breakfast that gives you steady energy without any crash.

Ingredients

  • ¼ cup whole black chia seeds
  • 1 cup full-fat coconut milk (canned)
  • 1 tsp matcha green tea
  • 1 tbsp Duck River honey
  • ½ tsp vanilla extract
  • Pinch of Redmond Real Salt
  • Toppings: medium shredded coconut, fresh kiwi, goji berries

Directions

  1. Whisk the matcha into the coconut milk until fully dissolved and no clumps remain.
  2. Add the chia seeds, honey, vanilla, and salt. Stir well.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. Stir before serving. Top with shredded coconut, sliced kiwi, and goji berries.

Notes

  • Use high-quality matcha for the best flavor and brightest green color.
  • If the pudding is too thick in the morning, stir in a splash of extra coconut milk.
  • Swap the honey for maple syrup to keep it fully vegan.
