Mediterranean White Bean Salad

This refreshing salad combines creamy white beans with bright Mediterranean flavors for a protein-packed lunch or side dish. The simple dressing allows the quality ingredients to shine while the beans provide satisfying substance.

Ingredients

  • 2 cups **Great Northern Beans**, cooked and cooled
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/3 cup **Extra Virgin Olive Oil**
  • 3 tablespoons **Red Wine Vinegar**
  • 2 tablespoons **Lemon Juice**
  • 2 teaspoons **Oregano**
  • 1 teaspoon **Garlic Powder**
  • 1 teaspoon **Redmond Real Salt**
  • 1/2 teaspoon **Black Pepper**
  • 1/4 cup fresh parsley, chopped

Directions

  1. Combine beans, cucumber, tomatoes, and red onion in large bowl.
  2. Whisk together olive oil, vinegar, lemon juice, oregano, garlic powder, salt, and pepper in small bowl.
  3. Pour dressing over bean mixture and toss gently to combine. Fold in fresh parsley.
  4. Let stand 15 minutes for flavors to meld before serving. Serve at room temperature or chilled.

Notes

  • Try **Greek Seasoning** instead of oregano for more complex flavor
  • Substitute **White Wine Vinegar** for red wine vinegar
  • Keeps refrigerated up to 4 days
