This nutty millet pilaf gets a boost of umami flavor from shiitake mushroom powder and fresh herbs. Millet's light, fluffy texture makes it a perfect alternative to rice or quinoa, while the mushroom essence adds sophisticated depth to this simple grain dish.
Ingredients
- 1 cup Hulled Millet
- 2 1/4 cups vegetable broth
- 2 tablespoons Extra Virgin Olive Oil
- 1 small onion, diced
- 2 teaspoons Shiitake Mushroom Powder
- 1 teaspoon Thyme
- 3/4 teaspoon Redmond Real Salt
- 1/4 teaspoon Black Pepper
- 2 tablespoons fresh parsley, chopped

Directions
- Heat olive oil in a large saucepan over medium heat. Add onion and cook 4-5 minutes until softened.
- Add millet and toast, stirring frequently, for 3-4 minutes until fragrant and lightly golden.
- Stir in shiitake mushroom powder, thyme, salt, and pepper. Cook 30 seconds until fragrant.
- Add vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer 18-20 minutes until liquid is absorbed and millet is tender.
- Let stand 5 minutes, then fluff with a fork and stir in fresh parsley before serving.
Notes
- Toast the Hulled Millet in a dry pan first for extra nutty flavor.
- Add Garlic Powder along with the mushroom powder for more depth.
- Try Rosemary (Herb) instead of thyme for a different herb profile.
