Miso Mushroom Ramen Broth

This deeply savory ramen broth gets its rich umami flavor from shiitake mushroom powder and miso paste, creating a satisfying vegetarian base that rivals traditional bone broths. It's perfect for a cozy dinner or when you're feeling under the weather.

Ingredients

  • 6 cups water
  • 2 tablespoons Shiitake Mushroom Powder
  • 1/4 cup Vegetable Soup Blend
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ginger
  • 3 tablespoons white miso paste
  • 1 tablespoon TN Maple Syrup
  • 1 teaspoon Redmond Real Salt
  • 4 oz ramen noodles

Directions

  1. In a large pot, bring water to a boil. Add shiitake mushroom powder and vegetable soup blend. Simmer for 15 minutes.
  2. Heat olive oil in a small pan over medium heat. Add garlic powder and ginger, cooking for 30 seconds until fragrant.
  3. In a small bowl, whisk miso paste with 1/2 cup of the hot broth until smooth.
  4. Add the garlic-ginger oil and miso mixture back to the pot. Stir in maple syrup and salt.
  5. Add ramen noodles and cook according to package directions, usually 3-4 minutes.
  6. Taste and adjust seasoning. Serve hot with desired toppings.

Notes

  • Top with Nutritional Yeast Flakes for extra umami flavor.
  • Add Chili Peppers (Crushed) for heat.
  • Substitute any long noodles if ramen noodles aren't available.
  • Broth base can be made ahead and stored for up to 3 days.
