This deeply savory ramen broth gets its rich umami flavor from shiitake mushroom powder and miso paste, creating a satisfying vegetarian base that rivals traditional bone broths. It's perfect for a cozy dinner or when you're feeling under the weather.
Ingredients
- 6 cups water
- 2 tablespoons Shiitake Mushroom Powder
- 1/4 cup Vegetable Soup Blend
- 2 tablespoons Extra Virgin Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Ginger
- 3 tablespoons white miso paste
- 1 tablespoon TN Maple Syrup
- 1 teaspoon Redmond Real Salt
- 4 oz ramen noodles

Directions
- In a large pot, bring water to a boil. Add shiitake mushroom powder and vegetable soup blend. Simmer for 15 minutes.
- Heat olive oil in a small pan over medium heat. Add garlic powder and ginger, cooking for 30 seconds until fragrant.
- In a small bowl, whisk miso paste with 1/2 cup of the hot broth until smooth.
- Add the garlic-ginger oil and miso mixture back to the pot. Stir in maple syrup and salt.
- Add ramen noodles and cook according to package directions, usually 3-4 minutes.
- Taste and adjust seasoning. Serve hot with desired toppings.
Notes
- Top with Nutritional Yeast Flakes for extra umami flavor.
- Add Chili Peppers (Crushed) for heat.
- Substitute any long noodles if ramen noodles aren't available.
- Broth base can be made ahead and stored for up to 3 days.
