These bars are like a homemade candy bar made with real ingredients. A chewy coconut base gets topped with a smooth dark chocolate layer that snaps when you bite through it. They live in the freezer and are perfect for when you need a sweet fix without any fuss.
Ingredients
- For the base:
- 2 cups medium shredded coconut
- ¼ cup melted coconut oil
- 3 tbsp TN maple syrup
- 1 tsp vanilla extract
- Pinch of Redmond Real Salt
- For the chocolate layer:
- 1 cup dark chocolate chips (Enjoy Life)
- 1 tbsp coconut oil

Directions
- Line a small baking dish (8x6 or similar) with parchment paper.
- Mix the shredded coconut, melted coconut oil, maple syrup, vanilla, and salt until well combined.
- Press the mixture firmly into the bottom of the dish in an even layer.
- Freeze for 15 minutes to set.
- Melt the chocolate chips and coconut oil together, stirring until smooth.
- Pour the chocolate over the coconut layer and spread evenly.
- Freeze for at least 30 minutes until the chocolate is firm.
- Cut into bars and serve straight from the freezer.
Notes
- Store in the freezer. They soften quickly at room temperature.
- Add a layer of peanut butter or almond butter between the coconut and chocolate for extra richness.
- Sprinkle flaky sea salt over the chocolate before it sets.
