No-Bake Chocolate Coconut Bars

These bars are like a homemade candy bar made with real ingredients. A chewy coconut base gets topped with a smooth dark chocolate layer that snaps when you bite through it. They live in the freezer and are perfect for when you need a sweet fix without any fuss.

Ingredients

  • For the base:
  • 2 cups medium shredded coconut
  • ¼ cup melted coconut oil
  • 3 tbsp TN maple syrup
  • 1 tsp vanilla extract
  • Pinch of Redmond Real Salt
  • For the chocolate layer:
  • 1 cup dark chocolate chips (Enjoy Life)
  • 1 tbsp coconut oil

Directions

  1. Line a small baking dish (8x6 or similar) with parchment paper.
  2. Mix the shredded coconut, melted coconut oil, maple syrup, vanilla, and salt until well combined.
  3. Press the mixture firmly into the bottom of the dish in an even layer.
  4. Freeze for 15 minutes to set.
  5. Melt the chocolate chips and coconut oil together, stirring until smooth.
  6. Pour the chocolate over the coconut layer and spread evenly.
  7. Freeze for at least 30 minutes until the chocolate is firm.
  8. Cut into bars and serve straight from the freezer.

Notes

  • Store in the freezer. They soften quickly at room temperature.
  • Add a layer of peanut butter or almond butter between the coconut and chocolate for extra richness.
  • Sprinkle flaky sea salt over the chocolate before it sets.
