Homemade granola bars are surprisingly easy when you skip the oven entirely. Honey acts as the glue that holds everything together, and a quick stint in the fridge firms them up into bars that slice cleanly. Pecans add crunch, chia seeds bring a little nutrition boost, and the whole batch takes about 15 minutes of active time.
Ingredients
- 2 cups rolled oats
- 1/2 cup pecan halves (raw), roughly chopped
- 2 tbsp whole black chia seeds
- 1/3 cup Duck River honey
- 1/4 cup almond butter or peanut butter
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1/4 tsp Redmond Real Salt

Directions
- Line an 8x8 inch baking dish with parchment paper, leaving overhang on two sides for easy removal.
- In a large bowl, combine the oats, chopped pecans, and chia seeds.
- In a small saucepan over low heat, warm the honey, nut butter, coconut oil, vanilla, and salt, stirring until smooth and combined. Do not boil.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- Press the mixture firmly into the prepared pan using the back of a spatula or your hands. Press hard for bars that hold together well.
- Refrigerate for at least 2 hours until firm, then lift out and cut into 8 bars.
Notes
- Add 1/4 cup dark chocolate chips (Enjoy Life) for a chocolate version. Press them into the top before refrigerating.
- Swap the pecans for walnuts (raw) or cashew pieces (raw).
- Wrap individually and store in the fridge for up to 1 week, or freeze for up to 3 months.
