Oat Flour Banana Pancakes

These pancakes prove you do not need a box mix to make a great stack. Rolled oats blended into flour give them a hearty texture, and ripe banana adds natural sweetness so you need less added sugar. The whole family will love these.

Ingredients

  • 1½ cups rolled oats (blended into flour in a blender)
  • 1 ripe banana, mashed
  • 2 large eggs
  • ¾ cup milk of choice
  • 1 tbsp TN maple syrup
  • 1 tsp baking powder
  • ½ tsp Ceylon cinnamon
  • ¼ tsp Redmond Real Salt
  • 1 tsp vanilla extract

Directions

  1. Blend the oats in a blender or food processor until they form a fine flour.
  2. Add the banana, eggs, milk, maple syrup, baking powder, cinnamon, salt, and vanilla. Blend until smooth.
  3. Let the batter rest for 5 minutes so the oat flour hydrates.
  4. Heat a griddle or skillet over medium heat and lightly grease.
  5. Pour ¼ cup of batter per pancake. Cook until bubbles form on the surface, about 2 minutes.
  6. Flip and cook 1 to 2 minutes more until golden.

Notes

  • Make sure you blend the oats fine enough. Coarse oats will give a gritty pancake.
  • Top with maple syrup, honey, pecan halves, or fresh berries.
  • The batter thickens quickly. If it gets too thick between batches, add a splash of milk.
