These pancakes prove you do not need a box mix to make a great stack. Rolled oats blended into flour give them a hearty texture, and ripe banana adds natural sweetness so you need less added sugar. The whole family will love these.
Ingredients
- 1½ cups rolled oats (blended into flour in a blender)
- 1 ripe banana, mashed
- 2 large eggs
- ¾ cup milk of choice
- 1 tbsp TN maple syrup
- 1 tsp baking powder
- ½ tsp Ceylon cinnamon
- ¼ tsp Redmond Real Salt
- 1 tsp vanilla extract

Directions
- Blend the oats in a blender or food processor until they form a fine flour.
- Add the banana, eggs, milk, maple syrup, baking powder, cinnamon, salt, and vanilla. Blend until smooth.
- Let the batter rest for 5 minutes so the oat flour hydrates.
- Heat a griddle or skillet over medium heat and lightly grease.
- Pour ¼ cup of batter per pancake. Cook until bubbles form on the surface, about 2 minutes.
- Flip and cook 1 to 2 minutes more until golden.
Notes
- Make sure you blend the oats fine enough. Coarse oats will give a gritty pancake.
- Top with maple syrup, honey, pecan halves, or fresh berries.
- The batter thickens quickly. If it gets too thick between batches, add a splash of milk.
