These little energy bites are the snack that everyone asks for the recipe. The base is just oats and peanut butter, sweetened with honey and studded with chocolate chips. Flax seeds blend right in without anyone noticing, adding fiber and omega-3s. They take five minutes to mix and ten minutes in the fridge to set up.
Ingredients
- 1 cup rolled oats
- 1/2 cup natural peanut butter
- 1/3 cup Duck River honey
- 2 tbsp flax seeds
- 1/3 cup dark chocolate chips (Enjoy Life)
- 1 tsp vanilla extract
- Pinch of Redmond Real Salt

Directions
- Combine the oats, peanut butter, honey, flax seeds, chocolate chips, vanilla, and salt in a large bowl. Stir until everything is well mixed.
- Refrigerate the mixture for 15 to 20 minutes to make it easier to handle.
- Scoop tablespoon-sized portions and roll into balls with your hands.
- Place on a parchment-lined plate or tray and refrigerate for at least 30 minutes until firm.
Notes
- Swap the chocolate chips for dried cranberries (apple juice infused) for a fruity version.
- Add 2 tablespoons of medium shredded coconut for extra texture.
- Store in an airtight container in the fridge for up to 10 days. They also freeze well for up to 3 months.
