Peanut Butter Oat Energy Balls

These no-bake energy balls are the easiest snack you will ever make. Peanut butter holds everything together, oats give them body, and honey adds just enough sweetness. Roll a batch on Sunday and you have grab-and-go fuel for the entire week.

Ingredients

  • 1 cup rolled oats
  • ½ cup peanut butter (natural, no sugar added)
  • ⅓ cup Duck River honey
  • ½ cup medium shredded coconut
  • ¼ cup whole black chia seeds
  • ¼ cup dark chocolate chips (Enjoy Life)
  • 1 tsp vanilla extract
  • Pinch of Redmond Real Salt

Directions

  1. Combine all ingredients in a large bowl and stir until everything is evenly mixed.
  2. Refrigerate the mixture for 15 to 20 minutes so it firms up and is easier to roll.
  3. Scoop tablespoon-sized portions and roll into balls with your hands.
  4. Place on a parchment-lined tray and refrigerate for at least 30 minutes before eating.

Notes

  • These keep in the fridge for up to a week or in the freezer for up to 2 months.
  • Swap the chocolate chips for dried cranberries or cacao nibs for a different flavor.
  • Try almond butter or cashew butter instead of peanut butter for variety.
