These no-bake energy balls are the easiest snack you will ever make. Peanut butter holds everything together, oats give them body, and honey adds just enough sweetness. Roll a batch on Sunday and you have grab-and-go fuel for the entire week.
Ingredients
- 1 cup rolled oats
- ½ cup peanut butter (natural, no sugar added)
- ⅓ cup Duck River honey
- ½ cup medium shredded coconut
- ¼ cup whole black chia seeds
- ¼ cup dark chocolate chips (Enjoy Life)
- 1 tsp vanilla extract
- Pinch of Redmond Real Salt

Directions
- Combine all ingredients in a large bowl and stir until everything is evenly mixed.
- Refrigerate the mixture for 15 to 20 minutes so it firms up and is easier to roll.
- Scoop tablespoon-sized portions and roll into balls with your hands.
- Place on a parchment-lined tray and refrigerate for at least 30 minutes before eating.
Notes
- These keep in the fridge for up to a week or in the freezer for up to 2 months.
- Swap the chocolate chips for dried cranberries or cacao nibs for a different flavor.
- Try almond butter or cashew butter instead of peanut butter for variety.
